In march of 2020, as the world plunged into chaos, chef hosea rosenberg and his wife lauren feder rosenberg were dealing with an independent crisis. Their daughter sophie had just been diagnosed with multicentric carpotarsal osteolysis (mcto) syndrome, a rare genetic disorder that causes progressive destruction of the carpal and tarsal bones.
